- Melt the butter in the microwave and set aside to cool.
- In a mixing bowl, beat the eggs and sugar until pale and fluffy.
- Grate the lemon zest and squeeze in its juice; add the milk to the egg mixture.
- Sift the flour and baking powder together, then fold into the wet mixture until just combined.
- Gently stir in the cooled melted butter.
- Cover the bowl with plastic wrap and refrigerate for at least an hour.
- Preheat your oven to 240°C (465°F). Fill madeleine molds three-quarters full with batter, then lower the temperature to 200°C (390°F) and bake for about 10 minutes.
- Let the madeleines cool properly before serving.
- Dust with powdered sugar before serving for an elegant touch!
