Ingredients
  

  • 80 g demi-sel butter
  • 2 eggs
  • 60 g sugar
  • 2 tablespoons milk
  • 1 lemon (zest and juice)
  • 130 g flour
  • 1/3 packet baking powder

Method
 

  1. Melt the butter in the microwave and set aside to cool.
  2. In a mixing bowl, beat the eggs and sugar until pale and fluffy.
  3. Grate the lemon zest and squeeze in its juice; add the milk to the egg mixture.
  4. Sift the flour and baking powder together, then fold into the wet mixture until just combined.
  5. Gently stir in the cooled melted butter.
  6. Cover the bowl with plastic wrap and refrigerate for at least an hour.
  7. Preheat your oven to 240°C (465°F). Fill madeleine molds three-quarters full with batter, then lower the temperature to 200°C (390°F) and bake for about 10 minutes.
  8. Let the madeleines cool properly before serving.
  9. Dust with powdered sugar before serving for an elegant touch!
