Ingredients
  

  • 1 cup couscous
  • 1 cup boiling water
  • 2 tomatoes diced
  • 1 medium cucumber diced
  • 1 medium red bell pepper diced
  • 1 medium red onion finely chopped
  • 0.5 cup fresh parsley chopped
  • 0.25 cup fresh mint chopped
  • 2 lemon Juice of
  • 3 tablespoons olive oil
  • to taste salt
  • to taste pepper

Equipment

  • A large mixing bowl
  • A sharp knife and cutting board
  • A whisk or spoon for the dressing
  • A fork for fluffing the couscous
  • An airtight container For storage

Method
 

  1. Pour the couscous into a large bowl and add the boiling water. Cover the bowl and let it sit for 10 minutes.
  2. While the couscous rests, dice the tomatoes, cucumber, red bell pepper and finely chop the red onion.
  3. Toss the chopped vegetables into the bowl with the couscous.
  4. Mix in the chopped parsley and mint. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour this dressing over the salad and toss until well combined.
  5. Cover the bowl and chill in the fridge for at least an hour before serving.
