Ingredients
  

  • 4 fillets cod (150 g each)
  • 100 g grated parmesan cheese
  • 200 ml thick crème fraîche
  • 1 lemon (juice and zest)
  • 1 tablespoon olive oil
  • 1 teaspoon mustard
  • 1 clove garlic (minced)
  • to taste salt and pepper
  • fresh parsley (for garnish)

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Heat the olive oil in a skillet over medium heat.
  3. Sear the cod fillets in the skillet for 2-3 minutes per side until golden brown.
  4. Transfer the seared fillets to an oven-safe dish and set aside.
  5. In a small saucepan, warm the crème fraîche over low heat.
  6. Stir in the grated parmesan, minced garlic, mustard, and lemon juice until smooth.
  7. Season the sauce with salt and pepper, then add lemon zest.
  8. Pour the parmesan sauce over the cod fillets in the baking dish.
  9. Bake for 10-12 minutes until the fish flakes easily with a fork.
  10. Garnish with fresh parsley and serve alongside your choice of sides.
