Ingredients
  

  • 4 cod fillets (about 150g each)
  • 200 ml thick cream
  • 50 g grated parmesan cheese
  • 1 lemon (zest and juice)
  • 2 tbsp olive oil
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley, chopped

Method
 

  1. Preheat your oven to 180°C (350°F) and season cod fillets with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat and sear cod fillets for 2-3 minutes per side until golden brown. Transfer to a baking dish.
  3. In a small saucepan, warm the cream over low heat. Stir in grated parmesan until melted, then add lemon zest and juice.
  4. Pour the creamy sauce over the cod fillets, then bake in the oven for 10-15 minutes until the fish flakes easily with a fork. Garnish with fresh parsley before serving.
