Ingredients
  

  • 1 cup dried green or brown lentils, rinsed
  • 2 medium carrots, peeled and diced
  • 1 parsnip, peeled and diced
  • 1 turnip, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • to taste Salt and pepper
  • 2 tbsp olive oil (optional)
  • to taste Fresh parsley for garnish

Method
 

  1. Start by chopping your root vegetables into bite-sized pieces.
  2. In a large pot, heat a splash of olive oil over medium heat, then add the onions and garlic.
  3. Let the onions soften and turn translucent.
  4. Add the lentils, diced veggies, cumin, and smoked paprika to the pot and stir.
  5. Pour in the vegetable broth and diced tomatoes, then bring the mixture to a boil.
  6. Reduce the heat to low and let it simmer for about 25-30 minutes, stirring occasionally.
  7. Taste and adjust seasoning if needed.
  8. For extra flavor, stir in a handful of chopped parsley before serving.
