Method
- Flatten the chicken by placing each breast between two sheets of parchment paper and gently pound until 1/2-inch thick.
- Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
- Coat each chicken piece in flour, dip into the egg wash, then press firmly into the breadcrumb mixture.
- Arrange the coated chicken pieces on a lightly oiled baking sheet and brush lightly with olive oil.
- Bake at 450°F for 25 minutes, flipping halfway, then top with marinara, mozzarella, and parmesan and bake for an additional 5 minutes.
- Broil for 1 minute to melt the cheese and garnish with fresh basil before serving.
