Ingredients
  

  • 3 pieces boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 3 pieces eggs
  • 1/3 cup olive oil
  • 1 1/2 cups breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons Italian herb mix
  • 1 teaspoon garlic powder
  • 6 slices mozzarella cheese
  • 1 1/2 cups marinara sauce
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons fresh basil

Equipment

  • Baking sheet
  • Parchment paper
  • Rolling pin or meat mallet
  • Shallow bowls for breading station
  • Oven-safe spatula

Method
 

  1. Flatten the chicken by placing each breast between two sheets of parchment paper and gently pound until 1/2-inch thick.
  2. Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
  3. Coat each chicken piece in flour, dip into the egg wash, then press firmly into the breadcrumb mixture.
  4. Arrange the coated chicken pieces on a lightly oiled baking sheet and brush lightly with olive oil.
  5. Bake at 450°F for 25 minutes, flipping halfway, then top with marinara, mozzarella, and parmesan and bake for an additional 5 minutes.
  6. Broil for 1 minute to melt the cheese and garnish with fresh basil before serving.
