Ingredients
  

  • 1000 g whole chicken breast or turkey breast
  • 100 ml maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 0.5 tsp cinnamon
  • 0.5 tsp ground ginger
  • to taste salt and pepper

Method
 

  1. Preheat your oven to 350°F (180°C) and lightly grease a baking dish with oil.
  2. Pat the chicken dry with paper towels and place it in the baking dish, skin-side up.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, olive oil, minced garlic, smoked paprika, cinnamon, and ginger. Season with salt and pepper.
  4. Brush half of the glaze over the chicken, then let it sit for 5-10 minutes.
  5. Bake in the oven for 40-50 minutes, basting with the reserved glaze every 15 minutes.
  6. Increase the oven temperature to 390°F (200°C) for the last 5 minutes to caramelize the glaze.
  7. Let the chicken rest for 10 minutes after removing it from the oven, then slice and serve.
  8. Basting is key to achieving a glossy, caramelized finish.
  9. Feel free to use boneless, skinless chicken thighs for more flavor.
  10. Store leftovers in an airtight container in the fridge for up to 3 days or freeze individual portions for up to 3 months.
  11. Experiment with adding a dash of cayenne pepper for added heat. Enjoy!
