- Preheat your oven to 350°F (180°C) and lightly grease a baking dish with oil.
- Pat the chicken dry with paper towels and place it in the baking dish, skin-side up.
- In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, olive oil, minced garlic, smoked paprika, cinnamon, and ginger. Season with salt and pepper.
- Brush half of the glaze over the chicken, then let it sit for 5-10 minutes.
- Bake in the oven for 40-50 minutes, basting with the reserved glaze every 15 minutes.
- Increase the oven temperature to 390°F (200°C) for the last 5 minutes to caramelize the glaze.
- Let the chicken rest for 10 minutes after removing it from the oven, then slice and serve.
- Basting is key to achieving a glossy, caramelized finish.
- Feel free to use boneless, skinless chicken thighs for more flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days or freeze individual portions for up to 3 months.
- Experiment with adding a dash of cayenne pepper for added heat. Enjoy!
