- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, chopped pecans, cinnamon, and salt; stir until evenly distributed.
- In a small saucepan or microwave-safe bowl, gently heat the maple syrup and melted coconut oil; stir in the vanilla extract.
- Pour the mixture over the dry ingredients and mix until every oat and pecan is coated.
- Spread the granola mixture evenly onto the prepared baking sheet and bake for 20–25 minutes, stirring halfway through to ensure even browning.
- Once done, let the granola cool completely on the pan to crisp up into clusters.
- Spoon Greek yogurt into a bowl, top with granola, and drizzle with additional maple syrup if desired.
