Ingredients

  • 500 g small pears halved and seeded (leave the skin on)
  • 35 g salted butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 bay leaves a few sprigs
  • 3-4 tbsp raw walnuts roughly chopped
  • Camembert cheese (a wheel or slices)

Equipment

  • Baking dish
  • Small saucepan
  • Melon baller or teaspoon
  • Whisk or spoon for stirring
  • Oven mitts

Method

  1. Preheat your oven to 180°C (350°F).
  2. Slice pears in half and scoop out the seeds, arranging them on bay leaves in a baking dish.
  3. In a small saucepan, melt the butter with maple syrup, vanilla extract, and bay leaves, bringing to a gentle boil until slightly thickened.
  4. Pour the glaze over the pears, letting it pool in the hollow centers.
  5. Roast the pears in the oven for about 25 minutes, checking if they are riper to reduce the time to 15 minutes.
  6. After roasting, add pieces of camembert among the pears, drizzle remaining glaze, and sprinkle chopped walnuts over the top.
  7. Return to the oven for another 15 minutes, watching closely to prevent burning.
  8. Serve immediately while warm with crispy baguette slices or crackers.

Notes

For a deeper flavor, toast the walnuts lightly before chopping. Use high-quality maple syrup for the best taste. This dish can be prepped ahead; store uncooked pears with glaze in the fridge overnight. If you have leftovers, they can be stored in an airtight container in the fridge for up to two days; reheat gently in the oven.
