- Season the chicken breasts with salt, pepper, Cajun seasoning, and smoked paprika.
- Heat olive oil and butter in a large skillet over medium-high heat, then sear the chicken until golden brown, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, sauté minced garlic for about 1 minute until fragrant.
- Pour in chicken broth and heavy cream, scraping up browned bits from the pan, then bring to a simmer.
- Stir in Parmesan and mozzarella cheeses until melted and smooth.
- Return the chicken to the skillet and simmer for 5 minutes.
- Cook fettuccine according to package directions until al dente, then reserve 1/2 cup of pasta water and drain the pasta.
- In another pot, melt butter and sauté garlic for 1 minute, then add heavy cream and bring to a simmer.
- Stir in Parmesan cheese until smooth, then add the cooked pasta and toss to coat, adjusting with reserved pasta water if needed.
- Plate pasta topped with Marry Me Chicken and garnish with chopped green onions.
