Ingredients
  

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup mozzarella cheese, shredded
  • 2 tablespoons chopped green onions, for garnish

Method
 

  1. Season the chicken breasts with salt, pepper, Cajun seasoning, and smoked paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat, then sear the chicken until golden brown, about 5-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, sauté minced garlic for about 1 minute until fragrant.
  5. Pour in chicken broth and heavy cream, scraping up browned bits from the pan, then bring to a simmer.
  6. Stir in Parmesan and mozzarella cheeses until melted and smooth.
  7. Return the chicken to the skillet and simmer for 5 minutes.
  8. Cook fettuccine according to package directions until al dente, then reserve 1/2 cup of pasta water and drain the pasta.
  9. In another pot, melt butter and sauté garlic for 1 minute, then add heavy cream and bring to a simmer.
  10. Stir in Parmesan cheese until smooth, then add the cooked pasta and toss to coat, adjusting with reserved pasta water if needed.
  11. Plate pasta topped with Marry Me Chicken and garnish with chopped green onions.
