- In a mixing bowl, combine the ground beef, breadcrumbs, Parmesan, egg, and Italian seasoning. Mix until just combined and roll into small, bite-sized meatballs.
- Heat a skillet over medium heat, add olive oil, and brown the meatballs on all sides.
- Cut sub rolls lengthwise, spread marinara sauce on the bottom half, add meatballs, sprinkle mozzarella on top, close the rolls, and place on a baking sheet.
- Bake at 375°F for about 10–12 minutes, or until the cheese is bubbly and slightly golden.
