Ingredients

  • 1 zucchini, sliced
  • 0.25 cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 0.25 cup crumbled feta cheese
  • 1 each juice of one lemon
  • to taste olive oil
  • to taste salt and pepper

Method
 

  1. Start by gathering all your ingredients. Slice the zucchini and Kalamata olives, setting them aside.
  2. Heat a large skillet over medium heat and add a drizzle of olive oil.
  3. Add the ground beef to the skillet and cook until browned, breaking it into small pieces as it cooks.
  4. Once the beef is cooked, add the sliced zucchini to the skillet and stir well.
  5. Cook for about 5-7 minutes, or until the zucchini is tender but still slightly crisp.
  6. Season the mixture with salt, pepper, and dried oregano. Stir in the sliced Kalamata olives.
  7. Squeeze the juice of one lemon over the stir-fry and stir to combine.
  8. Sprinkle the crumbled feta cheese over the top and serve.
