  • 60 ml olive oil
  • 3 tablespoon melted butter
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 3 cloves garlic, thinly sliced
  • 2 tablespoon capers
  • to taste kosher salt and freshly ground black pepper

Method
 

  1. Preheat the oven to 200°C (400°F) and place the cod fillets in a baking dish (approximately 23x33 cm or 9x13 inches).
  2. In a small bowl, whisk together the olive oil and melted butter until combined, then pour over the fish.
  3. Season the fish with ground coriander, paprika, kosher salt, and freshly ground black pepper.
  4. Sprinkle the lemon zest, arrange the thinly sliced garlic, and scatter the capers over the fish, topping with lemon slices.
  5. Bake for 15-20 minutes until the fish flakes easily with a fork, watching for a golden edge.
  6. Garnish with fresh lemon juice and chopped cilantro before serving immediately.
