- Preheat your oven to 180°C (350°F) and grease a medium-sized square oven-proof dish.
- Sift together the flour, baking powder, bicarbonate of soda, and salt in a bowl.
- In a separate bowl, cream together the softened butter and dark brown sugar until pale and airy.
- Add the eggs one at a time, beating well after each addition, and then mix in the apricot jam and apple cider vinegar.
- Fold the sifted dry ingredients and the Ideal Milk into the wet mixture until just combined.
- Pour the batter into the prepared dish and bake for 30 minutes, or until a skewer inserted in the center comes out clean.
- About 10 minutes before the pudding is done, combine all the sauce ingredients in a saucepan and bring to a boil, stirring continuously.
- Simmer the sauce for 5 minutes until it thickens and is glossy.
- Once the pudding is baked, pour the sauce over it immediately and serve warm with custard.

Notes
This dessert is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently with a little extra sauce.
