Method
- Preheat your oven to 350°F (177°C). Grease two 9-inch cake pans and line them with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.
- Add the buttermilk, vegetable oil, eggs, and vanilla to the flour mixture. Mix on medium speed until well combined.
- Reduce the mixer speed and carefully add the boiling water to the batter, mixing until well combined.
- Distribute the batter evenly between the two prepared cake pans. Bake for 30-35 minutes until a toothpick inserted comes out clean.
- Remove the cakes from the oven and let them cool for about 10 minutes, then remove them from the pans and cool completely.
- Place one layer on your serving plate, spread chocolate frosting over it, and sprinkle with M&Ms.
- Place the second layer on top and frost the outside of the cake, then press M&Ms into the sides and sprinkle on top.
