M&M Chocolate Cake

Ingredients
  

  • 2 cups all-purpose flour
  • 2 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon espresso powder
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups chocolate frosting
  • 1 1/2 cups M&M candies

Equipment

  • Two 9-inch cake pans
  • Parchment paper
  • Large mixing bowl
  • Electric mixer
  • Toothpick or cake tester
  • Serving plate

Method
 

  1. Preheat your oven to 350°F (177°C). Grease two 9-inch cake pans and line them with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla to the flour mixture. Mix on medium speed until well combined.
  4. Reduce the mixer speed and carefully add the boiling water to the batter, mixing until well combined.
  5. Distribute the batter evenly between the two prepared cake pans. Bake for 30-35 minutes until a toothpick inserted comes out clean.
  6. Remove the cakes from the oven and let them cool for about 10 minutes, then remove them from the pans and cool completely.
  7. Place one layer on your serving plate, spread chocolate frosting over it, and sprinkle with M&Ms.
  8. Place the second layer on top and frost the outside of the cake, then press M&Ms into the sides and sprinkle on top.
