- Preheat your oven to 450°F (232°C).
- Prepare the chicken by removing giblets and rinsing it inside and out; pat it dry with paper towels.
- Season the chicken generously with salt and pepper.
- In a medium bowl, combine the orange zest, lime zest, orange juice, lime juice, olive oil, garlic, cumin, oregano, black pepper, and cilantro; stir until well blended.
- Place the chicken in a roasting pan, and pour the marinade over it, ensuring it coats the chicken thoroughly.
- Let the chicken marinate for at least 30 minutes or up to 1 hour.
- Roast the chicken in the preheated oven for about 1 hour, monitoring and covering the breast with foil if it browns too quickly.
- Ensure the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
- Remove the chicken from the oven and let it rest for 15 minutes covered loosely with foil before slicing.
- Serve and enjoy!

Notes
Pat the chicken dry before seasoning for crispy skin. Fresh ingredients yield the best flavor in the marinade. For deeper flavor, marinate the chicken up to 24 hours in advance. Garnish with fresh cilantro or orange slices for presentation. Leftover chicken can be shredded and used in salads or wraps; store in an airtight container for up to 3 days.
