Ingredients
  

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 zucchini, diced
  • 1 avocado, sliced
  • 1 can black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 juice of lime
  • 1 tsp ground cumin
  • to taste salt and pepper
  • optional fresh cilantro, chopped

Method
 

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, combine the quinoa and water or vegetable broth; bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until cooked.
  3. Fluff the cooked quinoa with a fork and set aside.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the diced bell peppers, red onion, and zucchini; sauté for 5-7 minutes until tender and caramelized.
  6. Add the cooked quinoa, black beans, corn, and lime juice to the skillet; stir together.
  7. Season with ground cumin, salt, and pepper to taste; mix well.
  8. Transfer the mixture to serving bowls and top with sliced avocado and fresh cilantro, if desired.
  9. Serve immediately and enjoy!
