- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, combine the quinoa and water or vegetable broth; bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until cooked.

- Add the diced bell peppers, red onion, and zucchini; sauté for 5-7 minutes until tender and caramelized.
- Add the cooked quinoa, black beans, corn, and lime juice to the skillet; stir together.

- Transfer the mixture to serving bowls and top with sliced avocado and fresh cilantro, if desired.
