Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 cups mixed vegetables (like bell peppers, zucchini, and broccoli)
  • 3 tbsp olive oil
  • 1 unit juice of 1 lemon
  • 2 cloves garlic, minced
  • to taste salt and freshly ground black pepper
  • 1/4 cup chopped fresh herbs (like parsley and cilantro)
  • 1 tbsp honey
  • 1 tbsp Dijon mustard

Method
 

  1. Wash and chop your vegetables into bite-sized pieces.
  2. In a small bowl, whisk together the lemon juice, minced garlic, olive oil, honey, and Dijon mustard. Season with salt and pepper to taste.
  3. Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once hot, add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from the pan and set aside.
  4. In the same skillet, add the remaining olive oil and sauté the mixed vegetables for about 5-7 minutes, or until they are tender but still crisp. Stir frequently.
  5. In a large serving bowl, combine the cooked shrimp and sautéed vegetables. Drizzle the dressing over the top and toss everything together. Garnish with fresh herbs and serve immediately.
