Ingredients
  

  • 1 tablespoon butter
  • 1 pound salmon fillets
  • to taste salt
  • to taste pepper
  • 1/2 cup orange juice freshly squeezed from 1 orange
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon cornstarch whisked with 1 teaspoon water (optional for a thicker glaze)

Method
 

  1. Heat the butter in a large skillet over medium-high heat and season salmon with salt and pepper.
  2. Place the salmon skin-side up in the pan and cook undisturbed for 3-5 minutes until golden brown.
  3. Carefully flip the salmon using a spatula and cook for another 3-4 minutes until done (aim for 145°F).
  4. Remove the salmon from the pan and cover loosely with foil to keep warm.
  5. In the same skillet, lower the heat to medium and whisk together the orange juice, honey, soy sauce, garlic, and cornstarch slurry (if using).
  6. Cook the mixture until thickened and glossy, stirring constantly to prevent burning.
  7. Return the salmon to the skillet and spoon the glaze over it; let it simmer for a minute or two.
  8. Garnish with fresh orange slices and a squeeze of fresh orange juice before serving.
