Ingredients
  

  • 1 filet fish (cod, tilapia, or halibut)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp Cajun or Old Bay seasoning
  • ½ tsp red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp cooking oil
  • 2 cups cherry tomatoes
  • ½ cup olives (Kalamata or green)
  • 2 sprigs fresh parsley
  • 2 sprigs fresh thyme
  • 3 cloves garlic, minced
  • 1 tsp reserved seasoning mix
  • 2 tbsp water
  • 3 tbsp salted butter
  • a pinch salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix all seasonings for the fish in a small bowl and set aside 1 teaspoon for the tomatoes.
  3. Rub the fish with the seasoning on both sides and let it sit.
  4. Heat oil in a large oven-safe skillet over medium heat.
  5. Sear the fish for about 1 minute per side until golden brown, then set aside.
  6. In the same skillet, add cherry tomatoes, olives, garlic, and reserved seasoning. Cook for about 3 minutes until tomatoes soften.
  7. Nestle the fish back in the skillet among the tomatoes and olives, dot with butter, and transfer to the oven.
  8. Bake for 10 minutes or until the fish flakes easily with a fork.
  9. Serve garnished with extra parsley or a drizzle of olive oil.
