Ingredients
  

  • 4 sausages Sausages of your choice smoked, chipolatas, or herbed
  • 3 pieces Potatoes cut into quarters
  • 2 pieces Carrots sliced into rounds
  • 1 piece Zucchini chopped into chunks
  • 1 piece Bell pepper red or yellow, sliced into strips
  • 1 piece Red onion quartered
  • 3 cloves Garlic skin-on
  • 3 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Herbes de Provence
  • to taste Salt
  • to taste Pepper

Equipment

  • Baking sheet
  • Parchment paper
  • Mixing bowl
  • Tongs or spatula for flipping

Method
 

  1. Preheat your oven to 200°C (390°F).
  2. In a large bowl, combine chopped potatoes, carrots, zucchini, bell pepper, and onion. Drizzle with olive oil and sprinkle with paprika, Herbes de Provence, salt, and pepper; toss to coat.
  3. Spread the seasoned vegetables across a prepared baking sheet and nestle the sausages among them. Add garlic cloves in their skins.
  4. Roast in the oven for 30 to 35 minutes, stirring halfway through for even cooking.
  5. Remove from the oven, let rest for a couple of minutes, and serve.
