- Preheat your oven to 200°C (390°F).
- In a large bowl, combine chopped potatoes, carrots, zucchini, bell pepper, and onion. Drizzle with olive oil and sprinkle with paprika, Herbes de Provence, salt, and pepper; toss to coat.
- Spread the seasoned vegetables across a prepared baking sheet and nestle the sausages among them. Add garlic cloves in their skins.
- Roast in the oven for 30 to 35 minutes, stirring halfway through for even cooking.
- Remove from the oven, let rest for a couple of minutes, and serve.
