Ingredients

  • 1 and 1/2 cups cornstarch biscuits
  • 6 tbsp melted butter
  • 1/2 cup chocolate powder
  • 1 cup fresh cream
  • 3 tbsp sugar
  • 450 g cream cheese
  • 1 can condensed milk
  • 1 tsp vanilla extract
  • 12 cork paçocas
  • 1 can condensed milk
  • 2 tbsp butter
  • 3 tbsp chocolate powder

Equipment

  • Food processor
  • Removable bottom pan
  • Large mixing bowls
  • Saucepan
  • Whisk or electric mixer
  • Cling film

Method

  1. In a food processor, combine the cornstarch biscuits, melted butter, and chocolate powder. Pulse until the mixture resembles damp sand. Press it evenly into a removable bottom pan and refrigerate.
  2. In a large bowl, beat the fresh cream and 2 tablespoons of sugar until stiff peaks form. In another bowl, beat the cream cheese until airy, then gradually add the condensed milk and vanilla extract. Gently fold in the whipped cream. Incorporate kneaded paçocas into the mixture.
  3. Fill the crust with the filling mixture and spread it evenly. Cover with cling film and freeze for at least an hour until firm.
  4. For the topping, mix condensed milk, butter, and chocolate powder in a saucepan. Cook over medium heat, stirring constantly until thickened (about 10 minutes). If too thick, add a splash of milk.
  5. Once the pie is firm, remove it from the freezer and spread the topping over it. Decorate with chocolate shavings and crushed paçoca.
