Ingredients
  

  • 680 g cod fillets (about 170 g each)
  • to taste salt
  • to taste freshly ground black pepper
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 2 cloves garlic finely sliced
  • 1 unit preserved lemon diced
  • 1 tablespoon capers optional
  • 2 tablespoons fresh cilantro chopped
  • 1 pinch sweet paprika
  • as needed fresh lemon slices for garnish

Method
 

  1. Pat the cod fillets dry with paper towels and season both sides with salt, pepper, and sweet paprika.
  2. Heat the olive oil in a large skillet over medium-high heat, then add the cod fillets skin-side down.
  3. Cook the fillets undisturbed for about 4 minutes until the bottom is golden and the edges turn opaque.
  4. Carefully flip the fillets and add butter, sliced garlic, and capers (if using), spooning the melted mixture over the fish.
  5. Cook for another 3–4 minutes until the fish flakes easily with a fork.
  6. Stir in the diced preserved lemon and simmer for 1 minute. Remove from heat and sprinkle with chopped cilantro.
