Ingredients
  

  • 500 g spelled flour type 630 or wheat flour type 405
  • 80 g sugar
  • 1 pack vanilla sugar
  • 1 pack dry yeast or cube of fresh yeast
  • 300 ml lukewarm milk
  • 100 g soft butter
  • 80 g butter
  • 80 g sugar
  • 1 pinch salt
  • 150 g spelled flour type 630 or wheat flour type 405
  • 1500 g plums or damsons
  • q.s. butter for the mold for greasing

  • Hand mixer with dough hook
  • Deep baking tray (approximately 38 x 45 cm)
  • Oven
  • Measuring cups and spoons
  • Clean kitchen towel

Method
 

  1. In a large mixing bowl, combine the spelled flour, sugar, vanilla sugar, and yeast.
  2. Add the lukewarm milk and softened butter, kneading into a smooth dough with a dough hook for about 5 minutes.
  3. Cover the bowl with a kitchen towel and let the dough rest for 60 minutes in a warm place.
  4. Prepare the crumble topping by mixing butter, sugar, and salt in another bowl, then gradually adding spelled flour until coarse crumbles form.
  5. Refrigerate the crumbles while preparing the plums.
  6. Preheat your oven to 180 degrees Celsius (160 for a fan oven) and grease a deep baking tray (approximately 38 x 45 cm).
  7. Wash, pat dry, and halve the plums, then remove the stones.
  8. After the dough has risen, spread it evenly on the baking tray.
  9. Cover the dough with the plums and sprinkle the crumbles over the top.
  10. Bake in the preheated oven for about 35 minutes, or until golden brown and bubbling.
