Ingredients
  

  • 3 tablespoons butter
  • 1 small onion, finely chopped
  • 1 clove garlic, minced or grated
  • 1 teaspoon fresh thyme, chopped or ½ teaspoon dried thyme
  • 3 tablespoons gluten-free flour or regular flour if not gluten-free
  • 1 cup milk
  • 1 cup Gruyère cheese, grated
  • a pinch nutmeg optional
  • to taste salt
  • to taste pepper
  • 4 pounds potatoes, thinly sliced

Method
 

  1. Preheat your oven to 350°F (180°C) and melt the butter in a large skillet over medium heat.
  2. Add the chopped onion and sauté for 3-5 minutes until translucent.
  3. Stir in the minced garlic and thyme; cook for another minute.
  4. Sprinkle the flour into the skillet and cook for about a minute until slightly golden.
  5. Slowly pour in milk, whisking continuously until the sauce thickens (1-2 minutes).
  6. Lower the heat and stir in half of the Gruyère cheese; season with salt, pepper, and nutmeg if desired.
  7. Spread a thin layer of sauce in a baking dish and layer in the sliced potatoes, repeating with sauce until all are used.
  8. Top with remaining sauce and Gruyère cheese before baking.
  9. Bake for 45–60 minutes until the top is golden brown and potatoes are tender. Allow to rest for 10 minutes before serving.
