Ingredients
  

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup beef broth
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried thyme
  • to taste salt and pepper
  • 1 cup cooked rice (optional)

Method
 

  1. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.
  2. Add the ground beef to the skillet, breaking it up with a wooden spoon as it cooks. Cook until the meat is browned and fully cooked through.
  3. Stir in the sliced bell pepper, paprika, and dried thyme. Let them cook for a few minutes until the bell pepper starts to soften.
  4. Pour in the beef broth and add the can of diced tomatoes. Stir everything together and let it simmer for about 10-15 minutes.
  5. If you’ve prepared some cooked rice, stir it in. Serve the Quick Beef Skillet hot, garnished with some fresh herbs if you like.
