Ingredients
  

  • 8 oz chow mein noodles
  • 2 tablespoons vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 1 small onion, thinly sliced
  • 1 medium bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 2 cups cabbage, thinly sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 green onions, sliced
  • to taste Salt and pepper

Equipment

  • Large pan or wok
  • Knife and cutting board
  • Measuring spoons and cups
  • Tongs or spatula for stirring
  • Vegetable peeler (optional)

Method
 

  1. Cook the chow mein noodles according to the package instructions, drain, and set aside.
  2. Heat a large pan or wok over medium-high heat and add 1 tablespoon of vegetable oil. Stir-fry the thinly sliced chicken with salt and pepper until cooked through and slightly golden. Remove the chicken and set aside.
  3. In the same pan, add another tablespoon of vegetable oil and stir-fry the onion, bell pepper, carrots, and cabbage for about 3-4 minutes until tender-crisp.
  4. Return the cooked chicken to the pan, add minced garlic and grated ginger, and stir-fry for another minute.
  5. Add the cooked noodles to the pan, pour in soy sauce, oyster sauce, sugar, and sesame oil. Toss until well coated and heated through.
  6. Garnish with sliced green onions, adjust seasoning if necessary, and serve immediately.
