Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • to taste fresh parsley, chopped (for garnish)

Method
 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, add the rice and 2 cups of water or broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed. Fluff the rice with a fork and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onions become translucent.
  4. Add the ground cumin and paprika to the skillet, stirring well to combine.
  5. Toss in the cleaned shrimp and cook for about 3-4 minutes, or until they turn pink and opaque.
  6. Add the cooked rice to the skillet with the shrimp and mix everything together. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve hot.
