- Preheat your oven to 350F (175C) and grease/flour a 9x13-inch baking pan.
- Mix the cake mix, eggs, water, and vegetable oil according to package instructions in a large bowl; pour into the prepared pan.
- Bake for 30-35 minutes or until a toothpick comes out clean; let cool completely in the pan.
- For the raspberry filling, combine raspberries, sugar, and lemon juice in a saucepan; cook over medium heat until thickened (about 5-7 minutes), then let cool slightly.
- For the white chocolate pudding, whisk pudding mix and milk together until thickened (about 2 minutes); set aside.
- Once the cake is cool, poke holes all over the cake with a wooden spoon handle (about 1-inch apart).
- Spread raspberry filling evenly over the cake, allowing it to seep into the holes; smooth the white chocolate pudding over the top.
- Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form; spread over the pudding layer.
- Garnish with fresh raspberries and shaved white chocolate or chips if desired; refrigerate for at least 2 hours before serving.
