- Preheat your oven to 350°F (175°C) and mix dry ingredients in one bowl and wet ingredients in another.
- Combine the mixtures and divide the batter between two 8-inch round cake pans, baking for 20-25 minutes.
- Let the cakes cool completely before moving on to the cheesecake layer.
- Preheat your oven to 325°F (165°C) and beat cream cheese, sugar, and eggs until smooth.
- Mix in melted white chocolate, heavy cream, and vanilla, then pour into a springform pan.
- Bake in a bain-marie for 45-50 minutes until set, then cool to room temperature before refrigerating for at least 4 hours.
- Heat blueberry or raspberry juice with sugar until dissolved, sprinkle gelatin, and stir until dissolved; let cool slightly.
- Pour gelée over the chilled cheesecake layer and refrigerate for at least 2 hours to set.
- Assemble by layering red velvet cakes with the cheesecake in between, and decorate as desired.
