Ingredients
  

  • 1 large egg
  • 1 tbsp red food coloring
  • 1/2 tsp vanilla extract
  • 1/2 tsp white vinegar
  • 1 1/4 cups flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 cup white chocolate, melted
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sugar
  • 1 tbsp gelatin powder
  • 1 cup blueberry or raspberry juice
  • q.s. whipped cream for decoration
  • q.s. dark chocolate pieces for decoration
  • q.s. red velvet crumbs for decoration
  • q.s. chocolate chips for decoration

Method
 

  1. Preheat your oven to 350°F (175°C) and mix dry ingredients in one bowl and wet ingredients in another.
  2. Combine the mixtures and divide the batter between two 8-inch round cake pans, baking for 20-25 minutes.
  3. Let the cakes cool completely before moving on to the cheesecake layer.
  4. Preheat your oven to 325°F (165°C) and beat cream cheese, sugar, and eggs until smooth.
  5. Mix in melted white chocolate, heavy cream, and vanilla, then pour into a springform pan.
  6. Bake in a bain-marie for 45-50 minutes until set, then cool to room temperature before refrigerating for at least 4 hours.
  7. Heat blueberry or raspberry juice with sugar until dissolved, sprinkle gelatin, and stir until dissolved; let cool slightly.
  8. Pour gelée over the chilled cheesecake layer and refrigerate for at least 2 hours to set.
  9. Assemble by layering red velvet cakes with the cheesecake in between, and decorate as desired.
