  • 2 eggs
  • 1/2 cup vegetable shortening
  • 225 g softened cream cheese
  • 1/2 cup softened butter
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Method
 

  1. Preheat your oven to 175°C (350°F).
  2. In a large mixing bowl, combine the Red Velvet cake mix, eggs, and vegetable shortening, then mix until smooth.
  3. Scoop equal portions of batter onto an ungreased baking sheet, spacing them about 2 inches apart.
  4. Bake in the preheated oven for 8 minutes, or until slightly firm to the touch.
  5. Transfer baked cookies to a cooling rack to cool completely.
  6. In a medium bowl, beat together the softened cream cheese, butter, vanilla extract, and powdered sugar until light and fluffy to make the frosting.
  7. Spread frosting on the flat side of one cooled cookie and press another cookie on top to create a sandwich. Repeat with remaining cookies.
