- Preheat your oven to 350F (175C) and grease a mini muffin tin or line it with mini paper liners.
- In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until smooth and fluffy, then add the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips.
- Scoop about 1 tablespoon of cookie dough into each muffin cup, filling them about 3/4 full.
- Bake for 10-12 minutes, or until the edges are golden but the centers are still soft.
- Immediately press one mini Reese’s Peanut Butter Cup into the center of each cookie bite while they’re still warm and allow to cool in the tin for 10 minutes before transferring to a wire rack.

Notes
For a different texture, substitute mini chocolate chips with white chocolate chips or chopped nuts.
Freeze the Reese’s Cups for a few minutes before baking to prevent them from melting too quickly.
