  • 2 ribeye steaks (1-inch thick)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • to taste salt and pepper
  • 2 garlic cloves, smashed
  • 2 sprigs fresh thyme or rosemary
  • 2 large onions, thinly sliced
  • 2 tbsp butter (for onions)
  • 1 tbsp olive oil (for onions)
  • 1 tsp sugar (optional, for sweetness)
  • 4 large russet potatoes, cut into fries
  • 2 tbsp olive oil (for fries)
  • to taste salt and pepper (for fries)

Method
 

  1. Caramelize the onions: Heat butter and olive oil in a skillet over medium heat, add sliced onions, salt, and optional sugar, then cook for 20-25 minutes until golden.
  2. Make the crispy fries: Preheat the oven to 425°F (220°C), toss potato strips with olive oil, salt, and pepper, spread on a baking sheet, and bake for 30-35 minutes, flipping halfway.
  3. Cook the ribeye steaks: Heat olive oil in a skillet over medium-high heat, season steaks, sear for 4-5 minutes on each side, then add butter, garlic, and thyme, spooning melted butter over the steaks.
  4. Assemble and serve: Place a ribeye steak on each plate, top with caramelized onions, and serve with crispy fries.
