Ingredients
  

  • 1 cup golden raisins
  • 1/2 cup dark rum
  • 2 cups wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup butter (at room temperature)
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1 tsp vanilla essence

Method
 

  1. Soak the golden raisins in dark rum for at least 1 hour (or overnight).
  2. Beat the butter and brown sugar together until light and creamy.
  3. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla essence.
  4. In a separate bowl, combine wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt, then gradually add to the wet mixture, alternating with milk.
  5. Fold in the soaked raisins along with the rum, being careful not to overmix.
  6. Pour the batter into a buttered and floured mold and bake at 180°C (350°F) for 45-50 minutes until a toothpick comes out clean.
  7. Let the cake cool completely before serving; optionally glaze with rum or caramel glaze.
