- In a small bowl, infuse saffron threads in warm water for about 5 minutes.
- Add lemon juice, zest, garlic, olive oil, paprika, turmeric, salt, and pepper to create a marinade.
- Place chicken in a shallow dish or zip-top bag, pour marinade over, and coat well. Refrigerate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown on both sides (about 3-4 minutes per side). Remove chicken and set aside.
- In the same pan, deglaze with chicken broth, scraping browned bits from the bottom.
- Return chicken to the skillet, reduce heat, and let it simmer for 5-7 minutes.
- Transfer chicken to a serving platter, spoon sauce over, sprinkle with parsley, and garnish with lemon slices.
