- Heat a large skillet over medium heat, melt 1/4 cup of butter, then add chicken and cook until golden brown, about 5-7 minutes.
- In the same skillet, add remaining 1/4 cup of butter, then sauté onions, carrots, and celery for about 5 minutes until they soften.
- Sprinkle flour over the vegetables and stir; gradually add chicken broth and milk, stirring constantly, and simmer until thickened, about 5 minutes. Add salt, pepper, garlic powder, cooked chicken, and frozen vegetables, and simmer for another 5-7 minutes.
- Preheat oven to 425°F (218°C). Roll out the bottom pie crust into a 9-inch pie dish, pour in the creamy mixture, and cover with the top crust.
- Bake for 30-35 minutes or until the crust is golden brown and the filling is bubbly. Let cool for a few minutes before serving.

Notes
Feel free to customize the filling with any vegetables you have on hand, like zucchini or bell peppers. To make it quicker, consider using a store-bought crust or a biscuit topping instead of a traditional pie crust. For a golden finish, brush the top with an egg wash before baking. Let the pie rest for a few minutes after baking to help set the filling for easier slicing. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat at 350°F (175°C) for about 30-40 minutes.
