Ingredients
  

  • 8 pieces chicken drumsticks
  • 4 medium potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary
  • 1 sliced lemon (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes into bite-sized pieces. Toss with 1 tablespoon of olive oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Spread on a baking sheet.
  3. In a large bowl, mix 2 tablespoons of olive oil, 1 teaspoon of salt, ½ teaspoon of black pepper, garlic powder, paprika, and dried rosemary. Add the drumsticks and toss until evenly coated.
  4. Place the drumsticks on the baking sheet with the potatoes.
  5. Roast for about 45-50 minutes until the drumsticks are golden brown and the potatoes are tender, stirring halfway through.
  6. Optional: For extra crispy skin, turn on the broiler for the last 5 minutes, watching closely to prevent burning.
  7. Remove from the oven, let rest for a few minutes, and serve with fresh lemon juice squeezed on top.
