- Preheat your oven to 400°F (200°C).
- Peel and cube the potatoes into bite-sized pieces. Toss with 1 tablespoon of olive oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Spread on a baking sheet.
- In a large bowl, mix 2 tablespoons of olive oil, 1 teaspoon of salt, ½ teaspoon of black pepper, garlic powder, paprika, and dried rosemary. Add the drumsticks and toss until evenly coated.
- Place the drumsticks on the baking sheet with the potatoes.
- Roast for about 45-50 minutes until the drumsticks are golden brown and the potatoes are tender, stirring halfway through.
- Optional: For extra crispy skin, turn on the broiler for the last 5 minutes, watching closely to prevent burning.
- Remove from the oven, let rest for a few minutes, and serve with fresh lemon juice squeezed on top.

Notes
For a sweeter twist, substitute regular potatoes with sweet potatoes. Enhance the flavors by adding fresh herbs like thyme or oregano.
