Ingredients
  

  • 4 chicken breast fillets
  • 1 cup flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp dried basil leaves
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • q.s. salt and pepper to taste
  • ½ cup olive oil
  • 1 cup tomato-based marinara sauce
  • 1 cup shredded mozzarella cheese

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Pound chicken breasts until evenly thick using a meat mallet or rolling pin.
  3. Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, basil, oregano, garlic powder, salt, and pepper.
  4. Dip each chicken piece in flour, followed by the eggs, and coat with breadcrumb mix pressing crumbs onto the chicken.
  5. Heat olive oil in a large skillet over medium-high heat and sear breaded chicken for 2-3 minutes per side until golden brown.
  6. Transfer seared chicken to a baking dish and spoon marinara sauce over each piece, then sprinkle with shredded mozzarella.
  7. Bake in preheated oven for 10-15 minutes until cheese is bubbly and slightly golden.
