  • 200 g ham preferably raw
  • 100 g grated Gruyère cheese or another cheese of your choice
  • 30 cl thick crème fraîche
  • 1 tablespoon mustard
  • to taste salt and pepper
  • a little butter for greasing the dish

Method
 

  1. Preheat your oven to 200°C (about 400°F).
  2. Remove any damaged leaves from the endives and trim the ends. Blanch the endives in boiling salted water for about 5 minutes, then drain and set aside.
  3. Chop the ham into small pieces. In a mixing bowl, combine the chopped ham, crème fraîche, mustard, salt, and pepper to create a smooth filling.
  4. Butter a baking dish and place the blanched endives inside. Pour the ham and cream mixture over the endives, coating them well. Sprinkle the grated cheese on top.
  5. Place the dish in the preheated oven and bake for 25-30 minutes until the top is golden and bubbling. For an extra crispy top, broil for the last 2-3 minutes, watching closely to prevent burning.
