Ingredients
  

  • 200 g flour
  • 100 g butter
  • 4 eggs
  • 150 g Scottish smoked salmon
  • 200 g fromage frais
  • 1 avocado
  • 10 cl water
  • 1 teaspoon salt
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 200°C (about 392°F).
  2. In a saucepan, combine the water, butter, and salt. Heat until boiling.
  3. Add the flour all at once and stir until the dough forms a ball and pulls away from the pan.
  4. Remove from heat and let cool slightly. Gradually add the eggs one at a time, mixing well after each addition.
  5. Shape the choux pastry into a circle on a baking sheet lined with parchment paper.
  6. Bake the pastry in the preheated oven for 25 to 30 minutes until golden brown and puffed.
  7. While the pastry is baking, mash the avocado and mix in lemon juice and a pinch of salt.
  8. Once the pastry is baked, let it cool completely on a wire rack.
  9. Cut the cooled choux pastry in half horizontally.
  10. Spread a layer of fromage frais on the bottom half, then layer with smoked salmon and mashed avocado.
  11. Place the top half of the choux pastry over the filling and press gently to secure.
  12. Garnish with fresh dill.
