- Preheat your oven to 200°C (about 390°F). Scrub the potatoes, pat dry, and poke holes in each potato.
- Drizzle the potatoes with olive oil, season with salt and pepper, and rub it in. Place them on a baking sheet lined with parchment paper.
- Roast the potatoes in the oven for about 45 minutes until golden and tender.
- While roasting, chop the smoked salmon and mix it with crème fraîche, chopped chives, and lemon juice until smooth and creamy.
- Once the potatoes are done, let them cool slightly, slice each one in half, and fluff the insides with a fork.
- Spoon the salmon mixture onto each potato half and garnish with more chives or black pepper. Serve immediately.
