Ingredients
  

  • 4 medium potatoes
  • 200 g smoked salmon
  • 2 tablespoons crème fraîche
  • 1 tablespoon chopped chives
  • 1 unit lemon Juice of
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 200°C (about 390°F). Scrub the potatoes, pat dry, and poke holes in each potato.
  2. Drizzle the potatoes with olive oil, season with salt and pepper, and rub it in. Place them on a baking sheet lined with parchment paper.
  3. Roast the potatoes in the oven for about 45 minutes until golden and tender.
  4. While roasting, chop the smoked salmon and mix it with crème fraîche, chopped chives, and lemon juice until smooth and creamy.
  5. Once the potatoes are done, let them cool slightly, slice each one in half, and fluff the insides with a fork.
  6. Spoon the salmon mixture onto each potato half and garnish with more chives or black pepper. Serve immediately.
