- Preheat your oven to 400°F (200°C).
- Peel and chop the potatoes into bite-sized chunks and place them in a large mixing bowl.
- Drizzle the potatoes with 2 tablespoons of olive oil and add minced garlic, dried rosemary, thyme, salt, and pepper.
- Toss the potatoes to coat well and then transfer them to a large baking dish, arranging them in a single layer.
- Place the sausage links on top of the potatoes and drizzle with the remaining 1 tablespoon of olive oil.
- Bake in the preheated oven for about 45-50 minutes, stirring halfway through for even cooking.
- Optional: Sprinkle grated Parmesan cheese over the top during the last 10 minutes of baking.
- Remove from the oven and let the dish rest for 5 minutes before serving.
