Ingredients
  

  • 1 pound sausage links Italian sausages recommended
  • 4 large potatoes peeled and cut into chunks
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cloves garlic minced

  • Mixing bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the potatoes into bite-sized chunks and place them in a large mixing bowl.
  3. Drizzle the potatoes with 2 tablespoons of olive oil and add minced garlic, dried rosemary, thyme, salt, and pepper.
  4. Toss the potatoes to coat well and then transfer them to a large baking dish, arranging them in a single layer.
  5. Place the sausage links on top of the potatoes and drizzle with the remaining 1 tablespoon of olive oil.
  6. Bake in the preheated oven for about 45-50 minutes, stirring halfway through for even cooking.
  7. Optional: Sprinkle grated Parmesan cheese over the top during the last 10 minutes of baking.
  8. Remove from the oven and let the dish rest for 5 minutes before serving.
