- Preheat your oven to 180°C (356°F).
- Separate the egg yolks from the whites. In a large bowl, whisk yolks with mascarpone, mustard, and liquid cream until smooth.
- In another bowl, whip egg whites with a pinch of salt until stiff peaks form. Gently fold them into the mascarpone mixture.
- Fold in the crab meat and flaked smoked salmon carefully.
- Pour the mixture into a parchment-lined loaf pan and smooth the top.
- Bake for 30 minutes until golden brown and firm to touch; let cool before unmolding.
- Decorate the cooled log with shrimp, lemon wedges, and chopped chives for presentation.
