- Soak the gelatin leaves in cold water for about 10 minutes.
- In a saucepan, gently heat the fresh cheese until smooth, then add the soaked and drained gelatin leaves, stirring until fully dissolved.
- Zest and juice the lemon; add both to the cheese mixture and season with salt, pepper, and finely chopped fresh dill.
- Gently fold in the crab meat, smoked salmon cut into small pieces, and shrimp, being careful not to overmix.
- Line a loaf pan with plastic wrap and place a layer of white bread slices at the bottom.
- Add a layer of the seafood and cheese mixture, followed by another layer of bread, repeating the process until the mixture is gone.
- Cover the top with overhanging plastic wrap and chill in the refrigerator for at least 4 hours or until firm.
- Carefully remove the log from the mold, place it on a serving platter, and decorate with fresh dill and lemon wedges before slicing and serving cold.
