- Slice the peppers and onion into thin strips.
- Toss the sliced veggies with olive oil, garlic powder, smoked paprika, salt, and pepper until coated.
- Line a large baking sheet with parchment paper.
- Spread the seasoned veggies across the sheet pan, leaving space for the sausages.
- Nestle the sausages into the vegetables.
- Roast in the oven for 25–30 minutes, flipping the sausages and stirring the veggies halfway through.
- If desired, broil for an additional 2–3 minutes for extra caramelization.
