Ingredients
  

  • 450 g fresh okra, cut into pieces
  • 5 vine-ripened tomatoes or Roma tomatoes, chopped
  • 900 g raw large shrimp, peeled and deveined
  • 1 tablespoon garlic paste or 4 cloves of minced garlic
  • ½ cup roughly chopped onions
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse black pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons tomato paste
  • 2 tablespoons Cajun seasoning
  • 2 cups water or broth
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon red chili flakes (optional)
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 3 bay leaves

Method
 

  1. Prep all ingredients: cut okra, chop tomatoes, peel shrimp, and mince garlic/onions.
  2. Heat olive oil in a large pot over medium-high heat and cook shrimp for about 6 minutes until pink and opaque, then set aside.
  3. Add okra and onions to the same pot, cover, and cook for 20 minutes, stirring occasionally.
  4. Stir in tomatoes, tomato paste, Cajun seasoning, garlic, ginger, cumin, chili flakes, basil, parsley, and water/broth; mix well and add bay leaves.
  5. Reduce heat to medium-low, cover, and simmer for 45 minutes, stirring occasionally.
  6. Return cooked shrimp to the pot and simmer for an additional 10-15 minutes; let rest for 10 minutes before serving.
