- Prep all ingredients: cut okra, chop tomatoes, peel shrimp, and mince garlic/onions.
- Heat olive oil in a large pot over medium-high heat and cook shrimp for about 6 minutes until pink and opaque, then set aside.
- Add okra and onions to the same pot, cover, and cook for 20 minutes, stirring occasionally.
- Stir in tomatoes, tomato paste, Cajun seasoning, garlic, ginger, cumin, chili flakes, basil, parsley, and water/broth; mix well and add bay leaves.
- Reduce heat to medium-low, cover, and simmer for 45 minutes, stirring occasionally.
- Return cooked shrimp to the pot and simmer for an additional 10-15 minutes; let rest for 10 minutes before serving.
