  • 1 pie crust store-bought or homemade
  • 2 fresh leeks
  • 200 g peeled shrimp
  • 3 eggs
  • 150 ml thick cream
  • to taste salt
  • to taste pepper
  • to taste nutmeg
  • a drizzle olive oil

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Thinly slice the leeks and sauté them in a pan with olive oil until soft and slightly golden.
  3. In a large bowl, beat the eggs and mix in the thick cream. Season with salt, pepper, and nutmeg. Add the sautéed leeks and shrimp, and stir gently to combine.
  4. Lay the pie crust in a tart pan and pour the leek and shrimp mixture over the crust, spreading it evenly.
  5. Bake in the preheated oven for about 30 minutes or until the top is golden brown and the filling is set.
  6. Remove from the oven and let it cool for a few minutes before serving.
