- Gather and prep all ingredients, soaking dried shiitake mushrooms in warm water for 30 minutes.
- Mix the sauce in a small bowl with light soy sauce, oyster sauce, dark soy sauce, rice vinegar, sugar, and sesame oil.
- Boil water and blanch the noodles for 1-2 minutes, then drain and toss with oil.
- Heat a wok over medium-high, add oil, and sauté garlic until fragrant, then add shrimp with salt and pepper.
- Stir-fry shiitake mushrooms for a minute, then add cabbage and bell pepper, cooking until tender-crisp.
- Toss the noodles into the wok and pour the sauce over, stir-frying for 2-3 minutes.
- Add green onions, toss everything, and serve immediately.
