- In a bowl, combine the marinade ingredients and toss the chicken pieces until evenly coated; marinate for 30 minutes.
- While the chicken marinates, whisk together the sauce ingredients in a small bowl; set aside.
- Slice the onion and red bell pepper, mince the garlic, and crush the Sichuan peppercorns.
- Heat vegetable oil in a wok over high heat; add marinated chicken and sear for a couple of minutes, then stir-fry for 3-5 minutes until cooked through.
- Push chicken to one side and add onions, bell peppers, garlic, Sichuan peppercorns, and dried chilies; stir-fry together.
- Pour the prepared sauce into the wok, add peanuts and green onions; cook for another minute, then serve immediately.
