- Preheat your oven to 190°C (375°F).
- Season the chicken by tossing the flour, salt, pepper, and garlic powder together in a plastic bag, then add the chicken pieces and shake to coat.
- Heat olive oil in a large oven-safe skillet over medium-high heat and brown the chicken pieces for 3-4 minutes per side.
- Remove the chicken and set it aside on a plate lined with paper towels.
- In the same skillet, sauté the onions, carrots, and mushrooms for 5-6 minutes, then add the minced garlic and cook for another 30 seconds.
- Sprinkle the remaining flour into the skillet, stir for 2 minutes, then add ½ cup of chicken broth, scraping the bottom.
- Pour in the remaining broth and sprinkle in the herbs, stirring until the sauce thickens slightly.
- Nestle the chicken back into the skillet, skin-side up, and bake uncovered for 30-40 minutes.
- Once baked, transfer the chicken to a plate, stir in the cream, and return the chicken to the skillet, spooning the sauce over it.
