Ingredients
  

  • 1.4 kg chicken pieces with bone and skin
  • 2 tablespoons flour mixed with salt, pepper, and garlic powder
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 225 g sliced carrots
  • 225 g button mushrooms
  • 2 cups roughly chopped fresh spinach (optional)
  • 2 cloves minced garlic
  • 2 tablespoons flour (for the sauce)
  • 0.5 cup chicken broth (instead of wine)
  • 1 cup chicken broth
  • 2 tablespoons fresh herbs (or 2 teaspoons dried herbs)
  • cup heavy cream (light cream works too)

Method
 

  1. Preheat your oven to 190°C (375°F).
  2. Season the chicken by tossing the flour, salt, pepper, and garlic powder together in a plastic bag, then add the chicken pieces and shake to coat.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat and brown the chicken pieces for 3-4 minutes per side.
  4. Remove the chicken and set it aside on a plate lined with paper towels.
  5. In the same skillet, sauté the onions, carrots, and mushrooms for 5-6 minutes, then add the minced garlic and cook for another 30 seconds.
  6. Sprinkle the remaining flour into the skillet, stir for 2 minutes, then add ½ cup of chicken broth, scraping the bottom.
  7. Pour in the remaining broth and sprinkle in the herbs, stirring until the sauce thickens slightly.
  8. Nestle the chicken back into the skillet, skin-side up, and bake uncovered for 30-40 minutes.
  9. Once baked, transfer the chicken to a plate, stir in the cream, and return the chicken to the skillet, spooning the sauce over it.
